on the lighter side

So for the last 3 months, Wool and I have been eating better and trying to lose weight. We did a competition "the Biggest Loser" with some friends of ours and actually lost quite a bit. Wool lost 30 lbs, and I lost around 20 lbs. We both have gained some back, and are currently trying to keep it off. So I thought that I would just list some of the meals that we liked that are on the lighter side, so that I won't forget and go back to my old ways.


Pita bread Pizza
whole wheat pitas
pizza sauce, or spaghetti sauce
lots of veggies ( I like onions and tomatoes with fresh basil)
a little bit of cheese ( I like mozerella & parmesan)

Chicken Tacos
cubes or strips of chicken cooked in a skillet with taco seasoning
corn tortillas ( I heat them up on my gas stove, they get nice and soft and just a tiny bit black)
lettuce
tomatoes
Pico sauce (onion, tomato, cilantro, little lemon or lime, salt)
tiny bit of cheese

Grilled Chicken Salad
marinate chicken breasts for a few hours, grill chicken
salad ( I like veggie lovers bagged salad mix, and then add tomatoes)
Fat Free Ranch

Chicken or Steak Fajitas
cut up meat and marinate meat for a few hours
cook in skillet and add lots of onions and peppers
serve with mission low-carb tortillas (only 1 point, and a little more expensive but I like them)
FF sour cream

Yummy veggies
1 zucchini sliced
1 yellow squash sliced
1 onion sliced
about 1 cup chicken broth
Sautee veggies until tender. I like to add pepper and italian seasoning. Yum!

9-Can Chili

1 lb extra lean ground beef

1 onion, chopped

2 cans rotel tomatoes

2 can diced tomatoes w/garlic

1 can diced tomatoes

1, 8oz can tomato sauce

1 can white beans

1 can black beans

1 can pinto beans

1, 16 oz bag cole slaw mix

Brown onion and ground beef together, drain. Combine all ingredients into large pot and heat to boil.
